Why is Fresh Milled Flour Important?

When flour is used freshly milled, it contains 40 of the 44 essential nutrients needed to sustain human life! This whole grain possesses many vitamins, minerals, essential fatty acids and a multitude of phytochemicals. They also provide complex carbs and resistant starch as well and soluble and insoluble fiber!

Milling your own flour to bake with these life giving whole grains can significantly benefit your health!

Did you know that once milled, flour goes rancid after about three days.

Similarly to when you cut open an apple, it starts to go bad and lose its nutrients due to oxidation. 

To prevent flour from going bad, commercial millers began adding bleaching agents, preservatives and synthetic vitamins and minerals to commercially sold flour to make it shelf stable. 

Not only are unhealthy enrichments added to store bought flour but white flour has been sifted of the bran and germ which is the most nutrient dense part of the grain.
