Made with freshly milled einkorn flour, they have a tender crumb and rich, earthy flavor that pairs beautifully with sweet carrots and warm spices.

Baked to golden perfection, this recipe brings the comfort of classic carrot cake into an easy, everyday donut—perfect for slow mornings, special gatherings, or a simple homemade indulgence.

Ingredients

Donuts

  • 2 cups einkorn flour

  • 2.5 tsp baking powder

  • 1 tsp cinnamon

  • 1/2 tsp salt

  • 1/2 tsp nutmeg

  • 1/2 tsp ginger

  • 1/2 cup milk

  • 1/2 cup plain yogurt

  • 2/3 cup honey

  • 2 eggs

  • 1.5 tsp vanilla

  • 1 cup finely grated carrot

  • 3/4 c raisins (optional)

Icing

  • 2 cups powdered sugar

  • 4-8 tbsp milk

  • 4 oz cream cheese


Preparation

Step 1


Preheat oven to 350 and grease donut pans well.



Step 2


In a medium bowl, combine flour, baking powder, cinnamon, salt, nutmeg and ginger. Mix well and set aside.



Step 3


In a large bowl, combine milk, yogurt, eggs, honey and vanilla. Then add grated carrots and optional raisins. Add flour mixture and mix til combined. and set aside.



Step 4


Add batter into piping bag (or ziploc with edge cut) and pipe into donut pans.

and set aside.



Step 5


Bake for 8-10 mins. Once baking is complete, let rest for several minutes then remove donuts from pans using a knife to carefully release donuts from pan. Let donuts cool on a wire baking rack. and set aside.



Step 6


While donuts are cooling, make icing by beating cream cheese til smooth. Then add powdered sugar and milk til you reach desired icing consistency. Dip donuts in icing and enjoy!
