About the Recipe

Fresh milled flour doesn't have to be intimidating. These einkorn pancakes are easy, forgiving and a delicious way to begin your fresh milled flour journey!

This is my go-to pancake recipe because it can be modified to suit your families taste!

A few of my favorite ways to spice up this pancake recipe is to omit the bananas and:
-add a few spices and make gingerbread pancakes with homemade whipped cream
-add chocolate chips to make my kids "Mickey-Cakes"
-add blueberries and lemon to make a refreshing lemon blueberry pancake

The possibilities are endless!

Ingredients

  • 2.5 cups freshly milled einkorn flour

  • 1.5 tbs baking powder

  • 1 tsp salt

  • 2 bananas, mashed

  • 2 eggs

  • 2-4 tbs honey

  • 1-1.5 cup milk


Preparation

Step 1


In a medium bowl, mill 2.5 cups of einkorn flour. Add baking powder and salt. Mix and set aside.



Step 2


In a separate bowl, mash two bananas, add 2 eggs and mix well. Add honey (I usually eyeball keeping in mind that bananas sweeten the batter) and mix. Add 1 cup of milk and mix well. Mix in your flour mixture until completely combined. If your batter is too thick, add a but more milk.



Step 3


Heat skillet with butter or coconut oil, cook pancakes, top with desired topping and enjoy!
