This Overnight French Toast Casserole is the ultimate make-ahead breakfast for slow mornings and special gatherings.
With soft bread soaked in a rich, spiced custard and baked until golden, it comes together effortlessly after resting overnight.
Simply prep, chill, and bake in the morning for a warm, comforting dish that feels indulgent without the stress. Perfect for holidays, brunch, or cozy weekends.

Ingredients
Casserole:
Bread bag full of old bread (enough to fill 9x13 dish)
6 eggs
2 c milk
1 tsp vanilla
1 tsp cinnamon
1/2 c honey
4-6 oz cream cheese, cubed
fruit
Crumb Topping:
1/3 c honey
1/3 c oats
1/4 cup einkorn flour (can use any type of flour)
4 tbsp soft butter
Preparation
Step 1:
Let bread sit out to dry up Meanwhile, Spray or butter 9x13 casserole dish then placed cubed bread in dish.
Step 2:
In a medium bowl, mix milk, eggs, vanilla, cinnamon and honey til smooth. Pour mixture over bread. Cover and let rest overnight in fridge.
Step 3:
Next morning, preheat oven to 350. While oven is preheating, place cubed cream cheese and fruit on top of casserole.
Step 4:
In a small bowl, mix together crumb ingredients til resembles soft paste. Drop topping over casserole in chunks.
Step 5:
Bake at 350 for 45-55 mins. Check at 45 mins. Serve warm with maple syrup!
