Ingredients
Base:
3 ¼ cup einkorn flour
½ cup sugar
1 ½ tsp baking powder
½ tsp salt
1 cup butter, cold
2 eggs
1 tbsp vanilla
Strawberry Filling:
2-3 cups, diced strawberries
½ cup sugar
2 tsp water
2 tsp cornstarch
Topping:
3 oz cream cheese
1 cup powdered sugar
1 tsp vanilla
water or milk to reach desired consistency
Preparation
Step 1:
Dice strawberries and place in bowl or sauce pan with no heat. Add ½ cup sugar, stir and let sit for at-least 30 mins til strawberries release their juice. Set aside.
Step 2:
Mill flour & add sugar, baking powder, salt. Using a pastry cutter or food processor, cut butter into flour mixture until crumbly. Stir eggs and vanilla into flour mixture.
Step 3:
Press about ⅔ of the batter into a 9x13 baking dish lined with parchment paper. Make sure to smooth the base out equally.
Step 4:
Cook strawberry mixture until bubbly. Mix water and cornstarch well then add to strawberries. Cook on medium til thickened, remove from heat.
Step 5:
Spread strawberry mixture over base then crumble remaining batter over strawberries.
Step 6:
Bake for 35-40 mins.
Step 7:
Beat cream cheese, powdered sugar, vanilla and water then drizzle over your bars once cooled.
