There’s something especially fitting about baking with einkorn for Valentine’s Day. As one of the oldest cultivated grains, einkorn feels rooted in tradition, comfort, and care — all the things this holiday is really about.
These Einkorn Sugar Cookies are my second cookie in the Valentine’s cookie series, and they’re a love letter to simplicity done well.
At their core, these cookies are classic sugar cookies: buttery, lightly sweet, and soft with just the right amount of structure. But einkorn flour gives them a subtle upgrade. Its naturally nutty flavor and tender protein structure create a cookie that’s delicate without being crumbly, rich without being heavy.

Ingredients
2.5 c einkorn flour
1/2 salt
1/8 baking powder
1 stick soft butter
1 c sugar
1 egg
1 tsp vanilla
1/2 tsp almond (optional)
Preparation
Step 1:
Mill flour into bowl, add salt and baking powder, mix and set aside.
Step 2:
Beat butter and sugar well. Add egg and vanilla (and optional almond extract) and beat til mixed well.
Step 3:
Mix in flour til completely incorporated.
Step 4:
Roll out to 1/4” thickness (or preferred thickness), cut out cookies, place on prepared baking tray and place in freezer for 20-30 mins.
Step 5:
Bake at 350 for 7-10 mins depending on thickness. I prefer a thicker sugar cookie that’s on the edge of underbaked.
Step 6:
Frost with your favorite buttercream or royal icing once completely cooled and enjoy!
